I’m a baker so obviously I don’t believe in dieting, but I’m all about moderation. I also happen to love one-bite desserts. They are the perfect bite to end the meal or to snack on with less guilt. This Orange Cranberry Financiers recipe is the ideal example of this.
Orange Cranberry Financiers Recipe
Sweet orange and tart cranberry are a match made in heaven in these cute little Orange Cranberry Financiers. They are made with mostly almond flour, so they are very tender. The flavor is enhanced with nutty brown butter. They are sweet, but not too sweet with bright orange flavor and a quick surprised tartness from the fresh cranberry. They can be finished in one to two delicious bites and will leave you very happy.
Financiers may sound fancy, but this recipe is quite easy to make. The only step that will require a bit more attention is browning the butter. If it is your first time browning butter, just watch it like a hawk and pay attention to the smell. When butter starts to brown, it will have a wonderful nutty smell. When the color turns caramel, you have succeeded. Don’t freak out if you see black particles at the bottom of the pan. That’s burned milk solid, just don’t use it in your recipe.
Like I said, I’m a sucker for one-bite desserts. Give me anything baked in a mini muffin tin and I’ll be happier than a kid on Christmas morning. To be honest though, you won’t be able to resist these powder sugar dusted, bright Orange Cranberry Financiers. This recipe makes only 15 financiers, perfect for sharing with a few coworkers and friends. So what are you waiting for? Get to baking!
Ingredients
- Zest of 1 orange
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour
- 3/4 cup almond flour
- 3 large egg white
- 1/3 cup brown butter
- 15 fresh cranberries
- Melted butter and extra flour for pan
Instructions
- Whisk together sugar and orange zest in a medium bowl until fragrant and the sugar turns light orange.
- Sift flour and almond flour into the bowl with the orange sugar, making sure to break up any lumps of almond flour.
- Add the egg white and slowly whisk to incorporate the dry ingredients completely. Scrape the side of the bowl as necessary. Set aside.
- For the brown butter, start with 4 ounces (1 stick) of unsalted butter. Heat in a small sauce pan over medium heat. When the butter has melted, start whisking. The butter will start bubbling rapidly. When the bubble subsides, the butter will start to brown, continue whisking. When the butter smells nutty and becomes caramel in color, it is done. Remove from heat.
- Measure out 1/3 cup of brown butter, discard any burned milk solid at the bottom of the pan.
- Pour and whisk the still hot brown butter into the batter you set aside earlier until completely combined.
- Place the batter in the fridge for about 1 hour.
- Brush 15 cavities of a mini muffin pan with melted butter, and sprinkle with flour to completely cover all surfaces of the cavity.
- Preheat oven to 425°F.
- Remove batter from the refrigerator and transfer to a piping bag or a zipper bag. Cut the tip off, and pipe the batter into the prepared muffin pan, filling it 3/4 to the rim.
- Add 1 cranberry to each of the financier batter, push slightly down in the middle.
- Reduce oven temperature to 350°F and bake for 13 minutes.
- A toothpick inserted in the financier should come out clean when done.
- Carefully loosen financiers with a butter knife and un-mold immediately.
- Let cool completely on a cooling rack.
