Short on time, but need a dessert with an extra pop of color for an upcoming party? This Magical Rainbow Dessert Trifle is your answer! Simple to make and bursting with the colors of the rainbow, this dessert is sure to be a hit!

I definitely label myself as a party planner. You name it…birthday parties, half birthday parties, baby showers, baby sprinkles, even winter survival nights. I’ll take any excuse I can get to throw, and participate in, parties. This Magical Rainbow Dessert Trifle recipe is a go-to of mine at events that need an extra pop of color and a bit of fun! Moist cakes are stacked in a rainbow pattern, creating an impressive display for guests to enjoy.

Magical Rainbow Dessert Trifle Recipe

Ingredients:

  • 3 boxes white cake mix
  • 12 eggs
  • 1 1/2 cup oil
  • 3 3/4 cup water
  • Cooking spray
  • Red, yellow, and blue food coloring
  • 1/2 cup sugar
  • 1 quart heavy whipping cream

Tools needed:

  • 2 9-inch round baking pans
  • Stand or hand mixer
  • Glass trifle bowl

Directions:

Preheat the oven to 350ºF. Spray cake pans with cooking spray to keep from sticking.

In a bowl, make cake batter by mixing one box of cake mix, four egg whites, 1/2 cup oil, and 1 1/4 cup water. Using a beater, mix on medium speed for two minutes. Divide cake batter into two bowls. Dye one batter red with food coloring and the other orange (red and yellow food coloring make orange). Mix well and pour batters into prepared baking pans.

Cook for approximately 30 minutes or until inserted toothpick comes out clean. Let cool in pans for 10 minutes before transferring to a cooling rack. Wipe pans clean and thoroughly clean utensils and bowls. Repeat process two more times, making yellow, green, blue, and purple colored cakes. (Yellow and blue make green. Red and blue make purple.) Cool all six cakes completely before assembling the rainbow dessert trifle.

When cakes are cooled, combine heavy whipping cream and sugar in a stand mixer (or use a hand mixer) and mix on high until medium to stiff peaks form. Be careful to not over beat.

Using a knife, carefully cut the rounded tops off each cake so you have a flat surface (set aside for later use). Assemble the rainbow dessert trifle by layering red, orange, yellow, green, blue, and purple cake layers with whipped cream between each layer and on top. Keep the layers level and of equal sizing for a uniform look. Sprinkle the top with the cake tops, crumbled.

  • 1 QT heavy whipping cream

Instructions

  1. Preheat the oven to 350ºF. Spray 9-inch round baking pans with cooking spray to keep the cake from sticking to the pans.
  2. In a bowl, make cake batter by mixing 1 box of cake mix with 4 egg whites, 1/2 oil, and 1 1/4 cup water. Using a beater, mix on medium speed for 2 minutes. Divide cake batter into 2 bowls. Put enough red food coloring into one of the batter bowls until you achieve desired color. Put desired amount of red and yellow food coloring (to make orange) into the other batter bowl. When food coloring is evenly dispersed, pour batters into the prepared baking pans.
  3. Cook for about 30 minutes or until inserted toothpick comes out clean. Let cool in pans for 10 minutes before transferring the cakes to a cooling rack. Wipe baking pans clean and thoroughly clean utensils and batter bowls. Repeat cake batter process two more times, baking yellow, green, blue, and purple colored cakes. (Combining yellow and blue food coloring makes green. Red and blue make purple.) Allow all six cakes to cool completely before beginning to assemble the rainbow dessert trifle.
  4. When cakes are completely cooled, make the whipped cream. Combine heavy whipping cream and sugar in a stand mixer (or use a hand mixer) and mix on high until medium to stiff peaks form. Be careful to not over beat.
  5. Using a knife, carefully cut the tops of the cakes off so that you have a flat surface on each cake. Set aside the cake tops for later use. Assemble the rainbow dessert trifle in a glass trifle or cake bowl by carefully layering red, orange, yellow, green, blue, and purple cake layers with whipped cream between each layer and on top. Be sure to keep the layers level and of equal sizing for a uniform look. Sprinkle the top with the cake tops, crumbled.
  6. Serve with a whole lot of fun and enjoy!

Notes

Home Chef Tip: You can make your whipped cream up to 10 hours before assembling. Simply store it in an air-tight container in the refrigerator.

To have cleaner lines, use a piping bag when layering whipped cream between cakes.
